Hearty rice casserole with zucchini and feta cheese

Loose, spicy and very tasty tastes this vegetarian rice casserole. Zucchini, feta cheese and rice create a unique combination of flavors. According to the recipe, you can quickly conjure up the zucchini rice casserole with a few ordinary ingredients on the dining table. It passes perfectly as a main dish for lunch or dinner.

Ingredients

  • 200 g rice (e.g. long grain rice)
  • 350 g zucchini
  • 200 g feta cheese
  • 2 eggs
  • 100 ml milk
  • 100 g grated cheese
  • 1 spring onion
  • salt
  • pepper

Instructions

  • Cook rice in salted water according to package instructions.
  • Grate zucchini coarsely, crush feta cheese into small pieces and chop spring onion.
  • Put cooked rice, zucchini, feta cheese and spring onion in the casserole dish and mix everything together.
  • Beat eggs and milk, season with salt and pepper and pour over the rice mixture in the casserole dish.
  • Sprinkle the rice mixture with grated cheese and bake in a preheated oven at 180 °C top and bottom heat for about 35 minutes.
