Vegan cinnamon stars

These vegan cinnamon stars taste even better than traditional cookies made with animal products. They are incredibly moist, nutty, aromatic, soft – simply delicious. Moreover, you can make the cinnamon stars vegan according to this recipe in no time at all with a few ordinary ingredients. They are ideal not only as Christmas cookies for snacking, but also to give away to your loved ones.

Ingredients

  • 200 g ground almonds
  • 150 g ground hazelnuts
  • 100 g powdered sugar
  • 10 g cinnamon
  • zest of 1 organic orange
  • 10 ml freshly squeezed lemon juice
  • 50 ml cold water
  • 1 pinch of salt
  • ground almonds for sprinkling and rolling

for the glaze

  • 100 g powdered sugar
  • approx. 15 ml freshly squeezed lemon juice

Instructions

  • Mix ground almonds, ground hazelnuts, powdered sugar, cinnamon, orange zest and salt in a mixing bowl.
  • Add lemon juice and water and knead into a sticky dough. Shape the dough into a ball, flatten it, wrap it airtight and put the dough in the refrigerator for 1 hour.
  • Sprinkle a sheet of baking paper with ground almonds, place the dough on it and cover it with a second sheet of baking paper. Roll out the dough between the two sheets of baking paper to a thickness of about 0.7 cm.
  • Using a star cookie cutter, cut out stars from the dough, rolling the mold repeatedly in ground almonds, and spread the stars on a baking sheet lined with parchment paper.
  • Bake the cinnamon stars in a preheated oven at 200 °C top and bottom heat for about 10 minutes and let them cool.

Making the glaze

  • Put powdered sugar in a mixing bowl and gradually add lemon juice until you have a thick, glossy white glaze.

  • Brush the cooled cinnamon stars with the glaze and let them dry briefly.

Notes

  • You can adjust the amount of powdered sugar for the dough to taste. Since the dough doesn't use eggs or flour, you can just try it raw to find out if it's sweet enough.
  • Do not bake vegan cinnamon stars for too long. After baking, they should be very soft, and their color barely darker than before baking.
  • Depending on the size of the cookies, the specified baking time may vary.
  • The glaze should not become too thin or transparent. Therefore, gradually add the lemon juice to the powdered sugar until the glaze reaches the necessary consistency.
  • The time needed to cool the cinnamon stars is not included in the preparation time.
