Vegan blini without yeast

No less delicious than the classic Russian pancakes are these vegan blini. They come without egg and without milk. Whether for breakfast or dessert – the thin pancakes are guaranteed to convince not only vegans. For the simple recipe you need very few ingredients. It yields approx. 16 Ø 20 cm vegan blini.

Equipment

  • Ø 20 cm large coated pan

Ingredients

  • 550 ml sparkling mineral water
  • 40 ml vegetable oil
  • 20 g sugar
  • 1/3 tsp salt
  • 220 g flour

Instructions

  • Mix flour, sugar and salt in a mixing bowl.
  • Add carbonated mineral water in portions and mix to form a liquid dough. Let the dough rest for about 15 minutes.
  • Add vegetable oil to the liquid dough and mix.
  • Grease the pan with vegetable oil and heat it. Using a ladle, pour some batter into the hot pan and make brisk circular motions with the pan so that the batter spreads evenly and thinly all over the surface of the pan. Fry the pancake over medium heat until golden brown to golden brown on both sides. Repeat until all the batter is used, stirring the batter in the mixing bowl as you go. There is no need to grease the pan again.
