Honey cookies

Delicious, very aromatic and a sweet eye-catcher are the honey cookies with cinnamon and other spices. They are easy and quick to make with this recipe with ordinary ingredients. Snack on the honey pastry in between meals or serve it for dessert after dinner with a cup of coffee and tea. It also passes perfectly as Christmas cookies and as a homemade gift from the kitchen.

Ingredients

  • 70 g honey
  • 100 g butter room-warm
  • 120 g sugar
  • 1 egg
  • approx. 370 g flour
  • 3 g baking soda (sodium bicarbonate)
  • 1 tsp cinnamon
  • 1/2 tsp ginger powder
  • 1 pinch of nutmeg
  • 1 pinch of salt

for the coating

  • 1 egg

Instructions

  • Mix softened butter with sugar.
  • Add honey, cinnamon, ginger powder, nutmeg and salt and mix.
  • Add egg and mix again until homogeneous.
  • Add baking soda and stir it.
  • Add flour in portions and knead briefly to form a soft dough.
  • Roll out the dough on a sheet of baking paper to a thickness of approx. 0.5 - 0.7 cm, cut out circles or other figures from the dough or cut the rolled out dough into squares and distribute the cookies with a little distance from each other on a baking tray lined with baking paper.
  • Whisk an egg, brush the cookies with it and then draw a grid pattern on each cookie with a fork.
  • Bake the honey cookies in a preheated oven at 180 °C top and bottom heat for about 10 minutes.

Notes

  • Use good quality honey, preferably not too runny, for the recipe.
  • You can also refine the honey cookies with other spices.
  • The amount of sugar can be adjusted according to taste.
  • The amount of flour may vary, depending on how liquid the honey is. The cookie dough must be very soft, not mushy, not dry and not too firm.
  • Do not knead the dough too long, but only briefly to a homogeneous consistency, so that the honey cookies taste tender after baking.
  • Do not roll out the dough too thinly or the honey cookies may taste dry.
  • Do not bake the honey cookies longer than necessary or they may taste dry. Use a toothpick to check if they are done baking.
