Zucchini fritters

These delicious zucchini fritters are juicy on the inside and crispy on the outside. In no time at all and with just a few ingredients, you can conjure them up on the dining table with this recipe. The zucchini pancakes taste delicious with a dip, sauce or salad. They pass as a main meal or snack.

Ingredients

  • 700 g zucchini
  • 1 onion
  • 2 eggs
  • approx. 60 g flour
  • salt
  • pepper
  • vegetable oil for frying

Instructions

  • Grate zucchini with a coarse grater and put it in a mixing bowl. If juice has formed, pour it off.
  • Grate onion with a fine grater and add to the zucchini.
  • Add eggs, pepper to taste and in portions flour and mix until homogeneous.
  • Put some vegetable oil in a large frying pan and heat it.
  • Salt the zucchini mixture, add one heaped tablespoon of zucchini mixture per each fritter and fry on both sides over medium heat for about 3 - 5 minutes until golden brown.

Notes

  • Salt the zucchini mixture just before frying the fritters. If left salted, juices will form and the mixture will be runny.
  • The amount of flour indicated may vary. If the zucchini mixture is too liquid, you can add a little more flour. However, the zucchini pancakes taste best when they contain as little flour as possible. So add only the necessary portion of flour to the zucchini mixture.
