Mini pizza / pizza bites (pizzetta) vegan

Crispy dough crust, moist toppings and spicy sauce – the vegan mini pizza tastes delicious. You can eat it right out of your hand, so it's perfect as finger food or a snack. In addition, the pizza bites according to this recipe are easy and quick to make with ordinary ingredients.

Ingredients

for the dough

  • 300 ml water (lukewarm)
  • approx. 500 g flour type 550
  • 21 g fresh yeast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp sugar
  • flour for the work surface

for the topping

  • approx. 150 g broccoli (separated into small florets)
  • approx. 200 g tomatoes (cut into slices)
  • 1 red onion (cut into rings)
  • 50 g pizza cheese vegan (alternative)
  • some olive oil

for the tomato sauce

  • 200 g strained tomatoes
  • 1 clove of garlic
  • 1 tsp oregano
  • 1 tsp dried basil
  • salt
  • pepper

Instructions

Preparation of the dough

  • Dissolve fresh yeast and sugar in lukewarm water.
  • Add olive oil, salt and flour in batches and knead into a firm, somewhat sticky dough. Then knead the dough for about 7 minutes and let it rise covered in a warm place for 1 hour.

Preparation of the tomato sauce

  • Put strained tomatoes, garlic, basil, oregano in a blender and blend it to a homogeneous sauce.
  • Season the tomato sauce with salt and pepper.

Preparation of the mini pizzas

  • Dust the work surface with flour. Divide the dough into 12 pieces and shape each piece into a small pizza crust with an edge about 1 cm wide.
  • Spread half of the pizza crusts on a baking sheet lined with parchment paper and the second half on a second baking sheet.
  • Spread each pizza crust with the tomato sauce and spread broccoli, tomatoes and onions on top. Alternatively, sprinkle them with vegan pizza cheese.
  • Drizzle the mini pizzas with a little olive oil and bake the pizzas on the first baking sheet first, then on the second in a preheated oven at 250 °C top and bottom heat for about 10 minutes each.

Notes

  • Instead of fresh yeast you can use dry yeast. You will then need 7 g of it for the recipe.
  • The amount of flour given may vary. Therefore, add the flour in portions until the dough has the right consistency. It should be firm and somewhat sticky, not mushy and not dry.
  • For the tomato sauce you can use any spices. You can also adjust the amount of garlic to taste.
  • Instead of broccoli, tomatoes and onions, you can put any toppings on the pizza bites.
  • Because of the high baking temperature, do not leave the mini pizza unattended for too long while baking so that it does not burn.
