Stuffed flatbread with cheese and potatoes in pan

Crispy dough, creamy melted mozzarella and tender mashed potatoes are combined in this delicious flatbread in pan. You can make it yourself easily and quickly with this recipe using just a few ingredients. The potato cheese flatbread is ideal with a vegetable salad for lunch, as a snack between meals, for breakfast, as finger food for a party or to take away. It tastes delicious both warm and cold.

Ingredients

for the dough

  • 110 ml milk
  • 20 g butter (melted)
  • 180 g flour
  • 1/3 tsp salt

for the filling

  • 120 g grated mozzarella
  • 150 g potatoes (peeled)
  • 25 g mayonnaise
  • salt
  • pepper

for frying

  • some butter

Instructions

Making the filling

  • Boil potatoes and mash them.
  • Mix the mashed potatoes with mayonnaise and season with salt and pepper.

Making the dough

  • Put flour, melted butter, milk and salt in a mixing bowl, knead it into a firm dough and then knead the dough for about 5 minutes so that it becomes elastic. Refrigerate the dough, wrapped in an airtight container, for about 30 minutes.

Making the flatbread

  • Divide the dough into two equal pieces and roll each piece into a circle about 3 mm thick.
  • In the center of each dough circle, spread first grated mozzarella, then the mashed potatoes, and then more mozzarella.
  • Tape the edge of each dough circle together so that you have one filled dough ball each, and roll each dough ball back out into a patty about 1 cm thick.
  • Heat the pan and brush it with butter. Fry one of the two patties over low heat until golden brown on one side first, while brushing the second side with butter, turn it over, and fry it until golden brown on the other side as well. Repeat the same with the second flatbread.

Notes

  • If the dough is too sticky, add some more flour. If it is dry, add some more milk.
  • Instead of mozzarella, you can use another type of cheese.
  • The mashed potatoes can be seasoned with any herbs and spices.
