Palmier cookies / palmiers recipe (sweet pig ear cookies)

These delicious French palmier cookies are made of crispy puff pastry and lightly caramelized sugar. In addition, you can refine them with vanilla, cinnamon or chocolate, among other things. With this palmiers recipe you can make the sweet pig ear cookies, which are probably one of the easiest and fastest cookies in the world.

Ingredients

  • 450 g puff pastry (bought or homemade)
  • 80 g sugar
  • cinnamon or other spices (alternative)

Instructions

  • Roll out the homemade puff pastry to a square about 0.3 cm thick or let the purchased puff pastry from the freezer thaw according to package directions.
  • Sprinkle the dough liberally and evenly with sugar and cinnamon, if desired, and roll it up tightly from the two long sides toward the center. Place one of the rolls on top of the other, without separating the rolls, and press them together to flatten slightly. Cut the roll into slices about 1 cm thick, flatten each slice into the sugar to form heart shapes, and spread the cookies on a baking sheet lined with parchment paper, leaving a little space between them.
  • Bake the palmier cookies in a preheated oven at 220 °C top and bottom heat for about 10 minutes until they get a light brown color, then turn them and bake them for another 5 minutes or so.

Notes

  • The amount of sugar can be adjusted according to taste.
  • The palmier cookies can be refined with vanilla sugar, cinnamon, lemon or orange zest, coconut flakes, cocoa powder, among others. After baking, you can partially dip it in melted chocolate.
  • The French palmiers are ready baked when they have a light brown color. Don't leave them unattended in the oven too long so they don't burn. Also, do not bake for a shorter time than necessary or they may not taste crispy.
  • You can get large pig ear cookies by rolling up the dough from the two short sides. For large palmier cookies, the baking time may be longer.
