Quick pizza dough with dry yeast / vegan vegetable pizza

Nothing beats a delicious homemade pizza for lunch. According to this recipe, you can make the dough yourself much faster than it is the case with ordinary pizza dough. The vegan pizza is topped with tangy tomato sauce, creamy yeast molasses and crunchy veggies.

Ingredients

for the pizza dough

  • approx. 300 ml water (lukewarm)
  • 500 g flour type 550
  • 7 g dry yeast
  • 1 tsp salt
  • 1/2 tsp sugar
  • flour for the work surface

for the topping

  • 100 g cherry tomatoes
  • 50 g zucchini (sliced)
  • 60 g mushrooms (sliced)
  • 4 yellow bell pepper strips
  • 4 red bell pepper strips
  • olive oil (for brushing vegetables)

for the tomato sauce

  • 200 g strained tomatoes
  • 1/2 clove of garlic
  • 20 basil leaves
  • 1 tsp oregano
  • salt
  • pepper

for the yeast melt (vegan cheese sauce)

  • 25 g yeast flakes
  • 40 g vegan margarine
  • 25 g flour
  • 150 ml water
  • 1 pinch of turmeric powder (for color)
  • salt

for serving

  • fresh herbs (basil, parsley)

Instructions

Preparation of the pizza dough

  • Mix flour, dry yeast, salt and sugar in a mixing bowl.
  • Gradually add lukewarm water in portions and knead into a firm, somewhat sticky dough. Then knead the dough for about 7 minutes until it becomes elastic.
  • Cover the dough in the mixing bowl with a towel and let it rise in a warm place for 1.5 hours.

Preparation of the tomato sauce

  • Puree strained tomatoes, garlic and basil with a blender to a homogeneous sauce, seasoning it with oregano, salt and pepper.

Preparation of the vegan cheese sauce

  • Melt margarine in a small pan.
  • Add flour and mix thoroughly until there are no lumps.
  • Add water, yeast flakes, and turmeric powder, bring to a boil, stirring constantly, and cook, stirring if necessary, briefly until the mixture thickens. Season the sauce with salt as you go.

Bake vegan vegetable pizza

  • Dust the work surface with flour, stretch out the pizza dough to about the size of the baking sheet, leaving about 1 - 2 cm thick edges, and place the patty on a baking sheet lined with parchment paper.
  • Spread the tomato sauce on the pizza dough, spread the yeast lard in batches on the tomato sauce and top the pizza with the vegetables. Brush the vegetables a little with olive oil and bake the vegetable pizza in a preheated oven at 250 °C top and bottom heat for about 10 minutes.
  • Serve the vegan vegetable pizza with fresh, finely chopped herbs, for example basil, parsley.

Notes

  • If your yeast melt has become too runny, add some more yeast flakes to it. If it has become too thick, you can dilute it with a little water.
  • You can leave out the turmeric powder. It's just for color.
  • I made a very large pizza with the pizza dough. You can also divide the dough into three parts and make three smaller pizzas.
  • Depending on how thick the pizza dough is rolled out, the baking time given in the recipe may vary greatly.
