For this waffle cake recipe, you’ll need three ingredients and about 15 minutes of time. Also, no oven is needed for this. All you have to do is whip up butter and caramelized sweetened condensed milk cream, spread it on the waffle sheets, and your no bake wafer cake is ready. However, it needs a few hours to set.

You can make the cream for the Russian wafer cake even faster without a mixer. Melt butter and stir caramelized sweetened condensed milk into the still warm butter. I have made the cream according to this variant several times. It tastes a little less creamy, but more caramel. It also has a more pronounced caramel color. Another way to make the cream without a mixer is to mix soft butter and caramelized sweetened condensed milk together thoroughly with a spoon, fork or whisk until a homogeneous mass is formed.

Here’s how you can modify the recipe

Instead of using caramelized sweetened condensed milk, you can make the cream for the wafer cake with ordinary sweetened condensed milk without caramel flavor. Homemade sweetened condensed milk will also work for this. Also, you can spread the waffle sheets only with caramelized or classic sweetened condensed milk without butter. But then the Russian no bake wafer cake will taste sweeter and less creamy. In addition, you can refine the cake with any roasted nuts, by sprinkling each wafer sheet with the nuts after coating with the cream or stirring the nuts into the cream beforehand. Coconut flakes can also be used instead of nuts. If you spread the waffle sheets with a jam, you will also get a delicious wafer cake without having to make a cream for it. It is best to choose jam with a sour note, so that the cake does not taste too sweet.

Ingredients
  

  • 200 g waffle sheets (plain wafers)
  • 350 g caramelized sweetened condensed milk room warm
  • 150 g butter room warm

Instructions
 

  • Beat soft butter for approx. 3 - 5 minutes to a fluffy creamy light mass.
  • Add caramelized sweetened condensed milk in portions and whip briefly each time to a homogeneous cream.
  • Spread each waffle sheet evenly (not too thickly) with the cream, except for the last one, so that all the honeycombs are filled with it, and stack the waffle sheets on top of each other, with the sheet without cream coming on top.
  • Place a cutting board or something similar to weigh it down on top of the cake and refrigerate for at least 2 hours.
  • Cut the waffle cake into square pieces.
