The vegan nut chocolate jam cake is very versatile in taste. Thanks to hazelnuts, it tastes nutty. Cocoa powder and chocolate give it a chocolaty taste. Thanks to jam, it has a slightly fruity note.

In addition, you can change the recipe as you like, as far as the flavors are concerned.

For example, if you use a sour jam, your pound cake will have a sour taste.

Instead of hazelnuts, you can use other nuts, such as peanuts, walnuts or almonds, just like in my recipe for vegan nut cake. The important thing is that the nuts are roasted, so that they develop all their flavor.

You can also adjust the amount of chopped chocolate you add to the batter to taste. If you want to make the loaf cake without chocolate flavor, just replace cocoa powder in the recipe with the same amount of flour. In this case, omit the chopped chocolate.

Which baking pan?

I baked the vegan nut chocolate jam cake, just like my vegan applesauce cake for example, in a 25 cm x 10 cm loaf pan**. Alternatively, you can use another baking pan. Among other things, a round springform pan, in which I baked my vegan orange poppy seed cake, or a bundt pan is well suited for this.

Just note that, depending on the size of your baking pan, the baking time specified in the recipe may vary greatly for you. Do not bake the nut chocolate jam cake longer than necessary so that it tastes moist and not dry.

Instructions

  • Add the dry flour mixture to the liquid jam mixture and mix briefly to form a thick chocolate batter.
  • Briefly stir chopped chocolate and hazelnuts into the batter.
  • Pour the batter into the baking pan and spread some chopped chocolate and hazelnuts on its surface.
  • Bake the pound cake in a preheated oven at 180 °C top and bottom heat for about 40 minutes.
