First, cook rice according to package directions. In the meantime, grate zucchini coarsely, shred feta cheese and finely chop spring onion. Then mix the ingredients in the baking dish.
Now whisk eggs and milk until foamy, season with salt and pepper, pour over the rice mixture and spread grated cheese on top.
Then bake the hearty casserole at 180 °C for about 35 minutes. Done!
