It is incredibly moist thanks to the generous portion of wine. At the same time, it tastes heavenly fluffy and soft, among other things due to the fact that butter is whipped with powdered sugar until fluffy.

White, milk or dark chocolate – melted or chopped

For my red wine cake I took white chocolate. This makes it taste less chocolaty, but more like red wine and spices. Alternatively, you can make the cake with milk or dark chocolate. Then you might want to add more powdered sugar to the batter. Since white chocolate is quite sweet, I used much less powdered sugar. You can melt chocolate for the cake beforehand, as I did, or chop it coarsely.

In addition to cinnamon, the red wine cake can be refined with other spices. If you make it with dark chocolate, for example, chili powder goes well with it. For a slightly nutty flavor, replace a small amount of flour with ground nuts in the recipe. Or make the pound cake with homemade mulled wine instead of red wine, which already has all kinds of spices in it. If you like raisins, mix some of them into the batter.

Instead of using a loaf pan, you can also bake the pound cake in another suitable pan. A bundt pan and a round springform pan, among others, are suitable. In addition, you can make red wine muffins from the batter. Remember, though, that depending on the size of your baking pan, the baking time given in the recipe may vary greatly. For example, muffins are ready much faster than a cake.

Glaze, powdered sugar or nothing?

You can decorate the cake as you like. For example, frost it with a sugar glaze, as I did. You can also prepare a chocolate glaze for it. Or dust the moist red wine cake with powdered sugar. Without a decoration, however, it tastes just as delicious.

How to make red wine cake: tips and tricks

  • You can adjust the amount of powdered sugar to taste, depending on how sweet you like your cake and how sweet your chocolate is.
  • Instead of white chocolate, you can use milk or dark chocolate. In this case, increase the amount of powdered sugar if necessary.
  • Instead of melting chocolate, you can chop it coarsely.
  • Do not stir the batter too long, but only briefly until it has a homogeneous consistency. Otherwise, the cake might taste rubbery after baking.
  • To bake the pound cake, you will need a loaf pan measuring approx. 25 cm x 10 cm.
  • Be sure to grease and flour the loaf pan thoroughly so that you can easily remove the cake from the pan after baking.
  • Instead of baking in a loaf pan, you can bake the cake with wine in another pan. See my notes on this above. Depending on the size of the baking pan, the baking time given in the recipe may vary.
  • Use a wooden skewer to check if the cake is done baking. To do this, briefly insert a wooden skewer into the center of the cake and see if it comes out almost clean. If the wooden skewer remains smeared in raw batter, you still need to bake the cake. If only a few moist crumbs remain on the wooden skewer, it is done.
  • Do not bake the cake longer than necessary or it may taste dry and not moist.

Red wine cake

  • 25 cm x 10 cm loaf pan

Ingredients
  

  • 150 ml red wine
  • 100 g white chocolate melted and cooled down
  • 250 g butter room warm
  • 150 g powdered sugar
  • 4 eggs
  • 250 g flour
  • 8 g baking powder
  • 1 tsp cocoa powder
  • 1 tsp cinnamon
  • 8 g vanilla sugar
  • butter to grease the loaf pan
  • flour for dusting the loaf pan

for the glaze

  • 130 g powdered sugar
  • approx. 30 ml red wine

Instructions
 

  • Grease the loaf pan with butter and dust with flour, tapping off the excess flour.
  • Beat soft butter together with powdered sugar and vanilla sugar for about 5 minutes until creamy and fluffy.
  • Add eggs one at a time, beating each time until homogeneous.
  • Add red wine as well as melted white chocolate and mix until homogeneous.
  • Mix flour with cocoa powder, baking powder and cinnamon, add it to the red wine mixture and mix briefly to form a viscous batter.
  • Pour the batter into the loaf pan, smooth it out and bake the cake in a preheated oven at 180 °C top and bottom heat for about 45 minutes. Let the red wine cake cool down in the loaf pan and take it out afterwards.

Preparation of the glaze

  • Put powdered sugar in a bowl, add red wine gradually, stirring until you get a viscous pink glaze.
  • Pour the sugar glaze over the top of the red wine cake and let it dry briefly.
