If you don’t have a pasta machine, you can still make noodles yourself. Simply roll out the homemade pasta dough with a rolling pin. This works without any problems. If you want to save the trouble of rolling out, you can also use a pasta machine. I had made pasta without a pasta machine and it worked very well.

Why make homemade noodles?

Homemade pasta simply tastes best. Plus, it contains only the ingredients you use to make it. So you can make your pasta without egg. Whether you use spelt flour or wheat flour is up to your taste. You can create colorful noodles with spinach, beet, tomatoes or aromatic pasta with herbs just like normal white pasta. Moreover, it is quite easy to make pasta dough yourself. It’s best to prepare a double or triple amount of it and make the noodles in stock. This way you will always have a portion of homemade pasta and you will only have to cook it and serve it according to your taste.

You can prepare and serve your homemade pasta any way you like, just like store-bought pasta. How about a pasta casserole, for example? Or fry the vegan noodles in a pan together with vegetables. You can either cook the homemade noodles directly or preserve it for a longer period of time. This way you can also make a large amount of pasta in advance and store it for later. You can dry it or freeze it.

Freeze vegan pasta

  1. Roll the noodles generously in flour and form it into several pasta nests.
  2. Dust a kitchen tray with flour and spread the pasta nests on it.
  3. Let the homemade pasta freeze on the tray in the freezer for a few hours, then transfer it to a freezer bag.

Frozen noodles then needs to be cooked for about twice as long as the fresh pasta until it is done.

Drying homemade noodles without egg

The best way to dry homemade pasta is to let it hang. There are extra pasta dryers for this purpose. Or you can hang the noodles on a clothes rack. Depending on the room temperature, drying could take a few days. If you want to dry your pasta faster, you can dry it in the oven. To do this, spread it evenly and thinly on a baking sheet lined with baking paper and let it dry in the oven at about 40 °C convection for a few hours. The thinner you spread the noodles on the baking sheet, the faster it will dry. You should open the oven door every now and then so that the liquid can escape and mix the noodles briefly every now and then.

  1. Mix flour, durum wheat semolina and salt.
  2. Add olive oil and water in portions and knead everything into a firm dough. Knead the dough for about 10 minutes and refrigerate for 30 minutes.
  3. Roll out the pasta dough thinly, dust generously with flour and roll up into a roll. Cut the roll into slices and unfold the noodles. Ready are the homemade noodles! You can prepare them to taste and serve.

How to make colorful pasta: pasta dough recipe with spinach, beet & co.

If you need a change from the classic noodles, you can make your pasta in different flavors by adding vegetable puree or herbs to the dough. In doing so, you’ll not only spice up the pasta’s taste, but also its appearance and get green, yellow or red noodles, depending on the vegetables you use. Here I explain how to do it.

How to make green pasta with spinach or basil

  1. Pour boiling water over spinach, let it steep for about 10 minutes and then pour off the water. Add fresh water to the spinach and puree it.
  2. Prepare the noodle dough as the recipe says below, but replace the regular water with the spinach mixture.

If you are using basil for the pasta, simply puree fresh basil along with a small amount of water and then replace some of the water with the basil puree in the noodle dough recipe.

Make yellow noodles with pumpkin or turmeric

  1. Core pumpkin, cut it into pieces and bake it in the oven until it is cooked. Puree it afterwards.
  2. Prepare the pasta dough as the recipe says, but replace a lot of water with the pumpkin puree.

For the pasta with turmeric, simply add some turmeric powder to the regular pasta dough while kneading.

Prepare pink noodles with beet

  1. Peel beet, cut it into small cubes and put them in a saucepan with water. Boil the beet until it is cooked and then puree it directly in the water.
  2. Prepare the pasta dough as indicated in the recipe, replacing the normal water with the beet liquid.

To do this, simply replace some of the water in the recipe with tomato paste.

Chop any herbs, for example parsley or basil, and add them to the regular pasta dough while kneading. Use only herb leaves without stems. Otherwise, the stems can cause the dough to tear when rolled out.

How to make lasagna sheets

You can also make lasagna sheets from the same pasta dough. To do this, roll out the pasta dough thinly and cut it into sheets. You can adjust the size of the lasagna sheets directly to your casserole dish. Then you should pre-cook the lasagna sheets for about 2 minutes before you make a lasagna out of them. Without precooking, the lasagna sheets will taste very doughy in the lasagna because they will not be fully cooked. The pre-cooking time depends on how thick you rolled out the lasagna sheets.

Instructions
 

  • Mix flour, durum wheat semolina and salt in a mixing bowl.
  • Add olive oil and water gradually and knead into a firm dough. Knead the dough for 10 minutes, cover it and refrigerate it for 30 minutes.
  • Dust the work surface with flour, divide the dough into several pieces and roll out one piece thinly first.
  • Dust the rolled out dough generously with flour and roll it loosely into a flat roll.
  • Cut the roll into slices of any width (depending on how wide you want your noodles to be), unfold each slice so you have long strips, and roll the noodles in flour if necessary to keep them from sticking together.
  • Repeat the same with the remaining pieces of dough.
  • Cook the pasta in salted water for about 3 minutes and serve it as you like, for example with a sauce.
