When the baby starts the complementary feeding period, you will want to feed him as healthy as possible. Sugar and additives are not necessary. But the bigger the child gets, the more appetite he gets for snacks and sweets.

This wholemeal cake recipe is just right for that. Because thanks to banana, the pastry tastes naturally sweet, even without sugar, just like my vegan banana muffins. So you can give it to your kid to snack on without a guilty conscience.

Which bananas?

Only very ripe bananas are suitable for this sugar free children’s cake, just like for my chocolate banana bread or my banana muffins. They must either be completely brown or have brown spots.

You can’t make the wholemeal cake with green or yellow bananas. They have a different texture and flavor.

With the healthy kids’ cake recipe, you also have a great way to use up overripe bananas that you may have at home that no one wants to eat anymore.

Which flour?

For the children’s cake, you should use wholemeal flour. Just like for the baby cookies, it should be finely milled with no wholemeal scrap, especially if you are making the cake for a one year old baby.

I used whole spelt flour for this recipe. However, whole wheat flour is also suitable for this.

Alternatively, you can use a mixture of whole spelt flour and whole wheat flour**. That’s how I did it with my wholemeal bread rolls.

Which baking pan?

I baked the healthy kids’ cake in a brioche pan. It was 20 cm in diameter at the top, 10 cm at the bottom and 10 cm high. Baked in this pan, the wholemeal cake looks pretty and fits perfectly for a special occasion, such as a child’s birthday party, I think.

Of course, you can use another suitable baking pan. A loaf pan and a bundt pan will work for this, among others. Note that depending on the size of your baking pan, the baking time given in the recipe may vary greatly.

Perfect for the 1st child’s birthday

This banana cake with apple is perfect already for the 1st child’s birthday. Since it contains no granulated sugar and is made with wholemeal flour, you can feed it to a one-year-old baby without hesitation. Of course, all children are different, so you should take into account the needs of your baby.

But this wholemeal cake is also suitable for older children. It is a healthier alternative to such sweets as Russian mushroom cookies, cake “Muraveynik” or Russian turtle cake, which children like to snack on their birthday.

To make your child’s eyes shine even more on his birthday, decorate the wholemeal cake with fresh fruits. This way it looks more colorful, is healthier and tastes even fruitier.

How to make wholemeal cake: tips and tricks

  • Use only ripe or overripe bananas for the recipe.
  • Instead of whole spelt flour, you can use whole wheat flour or a mixture of the two flours.
  • If possible, use organic ingredients for the recipe to avoid exposing your child to the antibiotics and additives often found in conventional products.
  • Don’t stir the batter too long, but only briefly until it reaches just a homogeneous consistency so that the wholemeal cake later tastes soft and not rubbery.

  • Brioche baking pan 20 cm x 10 cm x 10 cm

Ingredients
  

  • 1 large apple peeled
  • 3 bananas very ripe
  • 60 ml organic milk
  • 60 ml organic rapeseed oil**
  • 1 organic egg
  • 280 g whole spelt flour
  • 9 g baking powder**
  • butter to grease the baking pan
  • whole spelt flour for dusting the baking pan

Instructions
 

  • Grease the baking pan with butter and dust it with whole spelt flour, knocking off the excess flour.
  • Core the apple and cut it into small cubes.
  • Mash banana finely with a fork or puree it with a blender.
  • Beat egg and rapeseed oil to an airy light mass.
  • Add milk and banana and mix.
  • Mix whole spelt flour with baking powder and stir it briefly into the banana mixture to form a viscous batter.
  • Stir the apple pieces into the batter.
  • Pour the batter into the baking pan and bake the cake in a preheated oven at 170 °C top and bottom heat for about 55 minutes.
  • Let the kids' cake cool down a bit in the baking pan, take it out and let it cool down completely.
