Blackcurrant jam recipe without preserving sugar

I made my blackcurrant jam without preserving sugar. Instead, apple pectin was used as a gelling agent.

Because normally preserving sugar consists of ordinary sugar, pectin and citric acid. Sometimes additives, like preservatives, are added to it. If you want to avoid them, study the ingredients list on the package.

Of course, you can make the jam without pectin, but with preserving sugar. Then just replace sugar and pectin in the recipe below with the same amount, so about 500 g of preserving sugar 3:1.

Alternatively, you can make the currant jam both without preserving sugar and without pectin. Since blackcurrants naturally have a high pectin content, you can make the jam using only berries and sugar. In this case, you will have to boil it down a little longer until the desired consistency is reached.

Very fine without seeds

I love jams with whole fruits, which you then spread on your bread. That’s why I made the blackcurrant jam with whole berries.

If you prefer a fine jam without seeds, puree the currants with a blender before cooking and pass the berry mixture through a sieve after cooking.

With spices or with a shot

By the way, you can spice up your blackcurrant jam with various spices. Refine it with vanilla or cinnamon, for example. Add them to the berry mixture during cooking.

The blackcurrant jam also tastes delicious with a shot of rum. Mix it into the jam after you have taken it off the stove.

  1. First, mix sugar with pectin and then put it in a saucepan with berries. Bring the berry mixture to a boil, stirring, and simmer for about 5 minutes.
  2. Now fill the jam into sterilized preserving or screw jars and let it cool down. Done!

Ingredients
  

  • 1500 g blackcurrants without stems
  • 480 g sugar
  • 23 g pectin

Instructions
 

  • Put blackcurrants in a large saucepan.
  • Mix sugar with pectin in a bowl, add it to the currants in the saucepan and mix.
  • Place the saucepan on the stove and heat the berry mixture over medium heat, stirring, until the sugar has dissolved and juices have formed.
  • Now bring the berry mixture to a boil while stirring and simmer for about 5 minutes.
  • Immediately pour the hot currant jam into sterilized preserving or screw jars, seal, and allow the jam to cool and gel.
